Meat Free Monday - Comfort Food

I adore meat with a deep abiding passion. But, for sustainable reasons, I do try and have a vegetarian day at least once a week. 



While I couldn't do the vegetarian thing 24/7, I enjoy doing it regularly. It's made me get creative when making some dishes, making sure they're filling and full of flavour. The standard that the dish has passed this test is when Himself doesn't complain of feeling hungry afterwards.

I'm going to post the recipes I've developed over the next few Mondays in order to try inspire you to do a meat free day. To start things off, given the miserable weather and general Mondayness, here's a real comfort food, belly hug one: Roasted Sweet Potato Wedges with Baked Beans & Grated Mozzarella. 

It's simple, takes very little effort and it is very satisfying. It's also healthier for you than traditional beans and chips - so you can indulge and feel virtuous! 


INGREDIENTS
200g sweet potatoes, cut into wedges
1/2 tin of baked beans
1 tablespoon of tomato pesto
1 teaspooon of freshly chopped basil 
70g grated mozzarella 

METHOD
Lightly spray sweet potatoe wedges with low cal oil and bake in oven at 150 degrees for 35 minutes. 
Heat baked bins in pot over stove. When bubbling, stir in tomato pesto and fresh basil and remove from heat. 
Plate wedges and pour beans over them. Add the grated mozzarella on top. 

Eat on the couch, in your pyjamas, watching trashy TV.
