Cauliflower Pizza - Half the calories, All of the fun

I'm not mad into this new "clean eating" thing.

It's not that I'm opposed to the idea of conscious eating. We should all pay attention to where the food comes from that we put into our bodies. But, as the old adage goes, everything in moderation.

However, the new trend of paelo, gluten-free, marco obsessed diets is unhealthy, I believe. As someone who recovered from an eating disorder, I know how dangerous it can be to focus only on the nutritional content of the food you eat and not look at the bigger picture.

However, it is good to try and eat healthy versions of out favourite food when we can. And if you are trying to lose some weight, it's a good idea to find ways of lowering fat and calorie content in some of your more sinful treats.

Enter Cauliflower Pizza.




It's actually crazy how simple this is to make yourself at home. In the same time it would take for a Dominoes to arrive, you'll have prepped, baked and begun devouring your homemade version.

Plus, is it ever not fun to make pizza and play around with your topping choices?

CAULIFLOWER PIZZA 
(makes one 9" + 1/4 pizza base)

1 large cauliflower head
1 egg, beaten
50g of grated cheddar and mozzarella cheese mix
Toppings of your choosing

-Pre heat oven to 180 degrees.
- Chop down your cauliflower into medium sized chunks and blitz in blender or food processor until it resembles fine crumbs.
- Place cauliflower in a heat proof bowl and microwave for 7-8 minutes to remove as much water as you can. Drain and allow to cool.
- Once cooled, add the beaten egg and cheese and thoroughly mix together. Turn the mix out into a lightly greased pizza dish or 9" baking tin and using the back of a spoon, pat down mix and smooth out evenly.
- Bake in oven for 15 minutes until base is crisped. Add toppings of your choosing and if you wish, bake for a further 3 minutes to heat.
