Monday Dinner Inspo - Prawn, Kale & Sweet Potato Skillet - MEAT FREE MONDAY


I'm particularly grumpy this Monday. There's no decent reason why, except for the fact it's a Monday, I didn't sleep very well and I'm currently not in my pyjamas watching Game of Thrones. First world problems. 

On days like these, I don't want to spend hours cooking dinner. Heck, I don't even want to wear trousers that have to bottom. I need everything to be simple, comforting, quick and tasty. 

This Prawn, Sweet Potato and Kale skillet is just the ticket.




The most difficult part is peeling and dicing the sweet potatoes, which isn't very difficult at all. After that's done and they've been left in a hot oven for 30 minutes, the rest is really just assembly. 

I top everything off with a garlic mayo of epic deliciousness. It provides perfect tang and cream to the dish. 

It's also incredibly healthy, along with being tasty and is a perfect option for a meat free Monday. You can easily swap out the prawns for some chickpeas and feel not a bit deprived. I would toss them in a tablespoon of olive oil and 2 of paprika before putting them in the oven for 12-15 minutes at 180. 

However you have it, you won't regret it. 




PRAWN, SWEET POTATO & KALE SKILLET

Pre-heat oven to 180 degrees Celsius. Serves 2 generously. 

1 white onion, diced
2 large sweet potatoes, peeled and diced
1/2 of panko breadcrumbs
4 large leaves of kale, shredded 
2 tablespoons of olive oil (one for onions)
500g of prawns 
Heinz Garlic Mayo + Hellman's Light Mayo (to make sauce) 


- Toss the sweet potatoes in the oil and sprinkle over panko breadcrumbs. Cook in the oven, uncovered, for 30 minutes. Remove and leave to one side.
- In a skillet/large frying pan, heat the remaining tablespoon of olive oil and add onions. Allow to cook on a medium heat for 7-10 minutes. Add in kale and sweet potatoes and toss together on a medium heat to warm. Add prawns and cook until pink. Ensure everything is thoroughly mixed. 
- Plate up food. In a small dish, mix 2 tablespoons of garlic sauce with one tablespoon of mayo and drizzle on top of dish. Eat, with delight.
